Meatless Stew | Batch Cooking Hero

The ultimate batch cooking superstar but don’t just take my word for it. This recipe will yield at least 6 servings, the most work involved is cutting the garlic and onions, it’s packed full of veggies and flavour and you can serve it with almost anything.

Great for cottage pies, as pasta sauce, with boiled rice or as a jacket potato filling – yesterday I just topped it with par boiled potato slices and placed in oven until potatoes were brown and crispy.

I now have frozen the leftover stew and will probably use during the week or for when I don’t quite want to cook anything – a common weekly occurance.

Meatless stew

Serves: 6

Syns per serving: 0* These is 1 tsp of sugar but since this yields 6 I have not counted them for each serving.

Ingredients

450g Minced Soy. I use Tesco’s Meat Free Vegetarian Mince

3 medium onions, chopped

4 garlic cloves, minced

4 cups of frozen mixed vegetables. I used a medley of peas, carrots and green beans.

2 tins of peeled plum tomatoes

2Tbsp tomato puree

2 bay leaves

2 vegetable stock cubes

splash of Worcestershire (I use Chippa, VGF)

1tsp brown sugar

1/2tsp garlic powder

125ml water

Salt and pepper

Spray oil

Method

  1. Spray pot with oil and place over medium heat. Once pot is hot, add onions and garlic and fry until soft.
  2. Add the tomatoes and gently break them up using a masher.
  3. Add the tomato puree, bay leaves, stock cubes, garlic powder, Worcester sauce, sugar, salt & pepper and water.
  4. Leave to simmer for 25 minutes stirring occasionally.
  5. Lower the heat to low/medium and add the minced soy and vegetables. Cook for a further 35 minutes. Stir occasionally and check for seasoning when warm.
  6. Remove the bay leaves and serve.
  7. Enjoy!

Tips

  • I add the water to the can of tomatoes after used to not waste whatever tomato juice was left in there.
  • You can use chopped tomatoes instead of peeled plum tomatoes. However, I find the flavour in the plum tomatoes is richer and, well, better.
  • If freezing the leftovers, remember to cool down thoroughly before doing so.
