I tried overnight crushed Weetabix today and it was … different – in a good way!. The crumbles soak up a lot of the yoghurt and it comes out quite stodgy, almost pudding-like. Try it when you’re filling adventurous or you can stay on the safe side and just crush over the fruit & you them just before eating them for a crunchy breakfast.

For the Hasbrown Pizza I used 4 toppings: mushrooms, sweetcorn, chicken strips and cheese (Tesco’s 30% Less Fat cheese x 25g). Today’s sweet treat was 1 pot of Hartley’s 10 cal jelly.

Second weekend in a row where I have French Toast for breakfast! Honestly, cannot have enough of them.

I made the muffins with asparagus tips and broccoli. For the side salad, I quickly chopped a couple of beetroots, cucumber, halved a couple of cherry tomatoes and dressed with lemon juice, salt and pepper. Simple and tasty.

Today’s sweet treat was a Tesco Healthy Living Choco Mousse for a respectable 4 Syns – absolute treat.

Spinach puree with rice topped with a fried egg is a childhood favourite. It’s basically pureed spinach (add a couple of boiled potatoes to add consistency) with a dash of milk and a tiny amount of butter. Speedy AND easy!

This has got to be one of my staple week dinner recipes. Done in not over 30 minutes and super healthy.

Can you tell we bought a lot of chocolate mousses this week?

Syns on the stir fry come from the sauce and minced garlic/ginger (Blue Dragon Oyster & Spring Onion 120g sachet: 7.5 Syns)

I do mix up the fruit I snack on during the week. However, I have plenty of syns available during the week in case I fancy something chocolate-y with my afternoon tea without any of the guilt!

So that’s another week done with quite a lot of syns left over to play with.

IDEAS TO INCREASE SYNS

  • Use olive oil for your salad dressings (6 syns for 1 Tbsp)
  • Have a couple of biscuits with your tea in the afternoon
  • Treat yourself to a slice of cake or a chocolate bar
