Low Syn Oaty Banana & Greek Yoghurt Muffins | Slimming World

These Gluten free and Low Syn (when using oats as your Hex B) muffins are the perfect  morning snack that ticks all my mid-morning sugar fix boxes. Pair them with a cup of tea or coffee and … yum!

The 2 Syns come from the mashed banana. I have seen many people use Quark as frosting, which works totally fine if you like it. Personally, I am not a fan of Quark on sweet things so I treat myself to some cream cheese if I need to bump up my Syns for the week. The cream cheese can also be used as part of your HEXA.

Low Syn Oaty Banana & GReek Yoghurt Muffins

Serves: 5 medium muffins

Syns: 2 (when using oats as your HEXB). 4 Syns if using cream cheese frosting.

INGREDIENTS

60g plain fat free Greek yoghurt

50g banana, mashed (2 Syns)

1 large egg

40g rolled oats, gluten free (HEXB or 6 Syns)

3Tbsp sweetener

1/4tsp vanilla essence

1/4tsp orange essence

1/2tsp cinnamon

pinch baking powder

pinch baking soda

for the frosting (optional)

50g Philadelphia cream cheese lightest (Syn FREE if using as part of your HEX A or 2 syns)

2tsp sweetener

1/4 tsp vanilla essence

METHOD

1. Mix all ingredients together

2. Pour mixture into silicone muffin cases and bake for x minutes until golden brown

3.  Bake at 180°C for about 20 minutes until firm to touch and golden brown

4. For the frosting, mix the cream cheese with the sweetener and vanilla. Spread over the muffins once cool.

5. Enjoy!
