This one is a bit of a treat but totally worth it! Pair it with some grilled meat and you’ve got a an easy star dish.
Low syn asparagus and basil salad
Syns: 3.25 per serving
For the dressing:
1 tbsp Olive oil; 6 syns
1 tsp Lemon juice
1 tsp French mustard; 0.5 syns
salt & black pepper to taste
For the salad:
230g Asparagus, trimmed
80g Cherry tomatoes; halved or quartered
20g Fresh basil leaves, chopped
1. Whisk all dressing ingredients together and add the tomatoes and basil leaves
2. Parboil the asparagus for 5 minutes and leave to cool
3. Once the asparagus have cooled down, add to the rest of the salad mixture and serve immediately.
Make sure you let the tomatoes soak in the dressing mix for a few minutes so it releases all its juice.
